Keto Farmers casserole

Ingredients

  • 1 tbsp olive oil or butter
  • 1 small onion, chopped
  • 1 cup bell peppers, chopped (any color)
  • 1½ cups cooked breakfast sausage or diced ham (low-carb)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
  • 8 large eggs
  • ¾ cup heavy cream (or unsweetened almond milk)
  • ½ tsp garlic powder
  • Salt & pepper to taste
  • Optional: ½ cup cooked spinach or riced cauliflower for added veggies
  • Optional topping: extra cheese, sliced green onions

🥣 Instructions

1. Preheat oven to 375°F (190°C). Grease a 9×13 inch casserole dish.

2. Sauté veggies:

  • In a skillet, heat olive oil. Sauté onions and bell peppers until soft (about 4–5 mins). Add spinach or cauliflower if using. Remove from heat.

3. Layer in casserole dish:

  • Spread cooked sausage or ham evenly across the bottom.
  • Add sautéed veggies on top.
  • Sprinkle shredded cheese evenly over everything.

4. Make egg mixture:

  • In a bowl, whisk together eggs, heavy cream, garlic powder, salt, and pepper.

5. Assemble:

  • Pour the egg mixture over the meat, veggies, and cheese.
  • Top with extra cheese or green onions if desired.

6. Bake:

  • Bake uncovered for 35–40 minutes, or until the center is set and top is golden.
  • Let cool for 5–10 minutes before slicing.

🔁 Storage & Reheat Tips:

  • Store leftovers in the fridge for 4–5 days.
  • Reheat in microwave or oven.
  • Great for freezing: slice and wrap individual portions!

💡 Variations:

  • Sub sausage with bacon, turkey, or chicken.
  • Add herbs like parsley or thyme for flavor.
  • Use dairy-free cheese and coconut cream to make it dairy-free.
