Keto Egg White Omelet

Ingredients:

  • 4 egg whites
  • Salt & black pepper (to taste)
  • 1 tbsp olive oil or butter
  • 2 tbsp chopped spinach (fresh or frozen)
  • 2 tbsp chopped bell peppers
  • 2 tbsp shredded cheese (cheddar, mozzarella, or your choice – optional but keto-friendly)
  • 1 tbsp chopped onion (optional – keep it minimal for keto)

Optional Add-ins (low carb):

  • Mushrooms, olives, jalapeños, cooked chicken, turkey, or beef

Instructions:

  1. Whisk It Up:
    In a bowl, whisk the egg whites with a pinch of salt and pepper until slightly frothy.
  2. Sauté Veggies:
    Heat oil or butter in a non-stick pan over medium heat. Add onions, peppers, and spinach. Sauté for 1–2 minutes until slightly soft.
  3. Pour & Cook:
    Pour the egg whites over the veggies. Let it cook without stirring until it sets from the bottom.
  4. Add Cheese (Optional):
    Sprinkle cheese on one half of the omelet if using.
  5. Fold & Finish:
    Gently fold the omelet in half. Cook for another 1–2 minutes.
  6. Serve Hot:
    Plate it and enjoy with a side of avocado or keto salsa!
