Keto Egg Fritters with Cabbage

Ingredients:
- 2 cups cabbage, finely shredded
- 2 large eggs
- 1/4 cup grated cheese (cheddar or mozzarella work great)
- 2 tbsp almond flour (or coconut flour)
- 1/4 tsp garlic powder
- Salt and black pepper to taste
- 1 tbsp chopped green onions (optional)
- Oil or butter for frying
Instructions:
- In a large bowl, mix together the shredded cabbage, eggs, cheese, almond flour, garlic powder, salt, and pepper. Add green onions if using.
- Mix until everything is well combined. The mixture will be thick and slightly sticky.
- Heat a non-stick pan over medium heat and add a little oil or butter.
- Scoop about 2 tablespoons of the mixture and flatten it gently into the pan to form a fritter.
- Cook for 3–4 minutes on each side until golden brown and cooked through.
- Remove and place on a paper towel to absorb excess oil.
- Serve hot with sour cream, Greek yogurt, or sugar-free ketchup!
