Keto Egg Fritters with Cabbage

Ingredients:

  • 2 cups cabbage, finely shredded
  • 2 large eggs
  • 1/4 cup grated cheese (cheddar or mozzarella work great)
  • 2 tbsp almond flour (or coconut flour)
  • 1/4 tsp garlic powder
  • Salt and black pepper to taste
  • 1 tbsp chopped green onions (optional)
  • Oil or butter for frying

Instructions:

  1. In a large bowl, mix together the shredded cabbage, eggs, cheese, almond flour, garlic powder, salt, and pepper. Add green onions if using.
  2. Mix until everything is well combined. The mixture will be thick and slightly sticky.
  3. Heat a non-stick pan over medium heat and add a little oil or butter.
  4. Scoop about 2 tablespoons of the mixture and flatten it gently into the pan to form a fritter.
  5. Cook for 3–4 minutes on each side until golden brown and cooked through.
  6. Remove and place on a paper towel to absorb excess oil.
  7. Serve hot with sour cream, Greek yogurt, or sugar-free ketchup!
