Keto Egg & Broccoli Bars

Ingredients

  • 1 ½ cups broccoli florets (chopped small) – fresh or frozen (thawed & drained)
  • 6 large eggs
  • 1 cup shredded cheddar cheese (or any cheese you like)
  • ¼ cup heavy cream (or full-fat coconut milk)
  • ¼ cup almond flour
  • 1 tsp baking powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil or butter (for greasing the dish)

🥣 Instructions

  1. Preheat oven to 180°C / 350°F.
    Grease an 8×8-inch baking dish with butter or oil.
  2. Steam or microwave broccoli for 2–3 minutes until just tender. Let it cool and pat dry to remove excess moisture.
  3. In a large bowl, whisk the eggs, heavy cream, garlic powder, onion powder, salt, and pepper.
  4. Stir in the almond flour, baking powder, cheese, and chopped broccoli. Mix until well combined.
  5. Pour the mixture into the prepared baking dish. Spread evenly.
  6. Bake for 25–30 minutes, or until the top is golden and the center is set.
  7. Cool slightly, cut into bars, and enjoy warm — or let cool completely and store in the fridge for 4–5 days.

💡 Tip: These bars can be reheated in the microwave or eaten cold. You can also add chopped cooked chicken, mushrooms, or bell peppers for variation.
