Keto Eclair Cake

Ingredients:

For the Crust:

  • 2 cups  almond flour
  • 1/4 cup melted butter
  • 2 tbsp powdered erythritol or other keto-friendly sweetener
  • 1 tsp vanilla extract

For the Cream Filling:

    • 1 cup heavy cream
    • 1 cup unsweetened almond milk
    • 1/3 cup powdered erythritol
    • 4 large egg yolks
    • 2 tsp vanilla extract
    • 1 tbsp unsalted butter
    • 2 tbsp coconut  flour (optional, for thickening)
    • For the Topping:
    • 3 oz unsweetened dark chocolate (85% or higher)
    • 1/4 cup heavy cream
    • 1 tbsp powdered erythritol (optional for sweetness)
    • Instructions:
    • 1. Prepare the Crust:
    • In a medium bowl, mix almond flour, melted butter, powdered sweetener, and vanilla extract until well combined.
    • Press the mixture into the bottom of an 8×8-inch baking dish to form an even crust.
    • Bake the crust for 10-12 minutes, or until lightly golden brown. Allow it to cool completely.
    • 2. Make the Cream Filling:
    • In a saucepan, combine heavy cream, almond milk, powdered sweetener, and egg yolks. Heat over medium heat while whisking constantly.
    • Continue whisking until the mixture thickens enough to coat the back of a spoon. This may take about 5-7 minutes.
    • Remove from heat and stir in vanilla extract and butter. If you want it thicker, add coconut flour gradually until desired thickness.
    • Let the filling cool for about 10 minutes, then pour it over the cooled crust. Spread evenly.
    • Place the dish in the fridge to chill for at least 1 hour, allowing the filling to set.
    • 3. Make the Chocolate Topping:
    • In a small saucepan, heat the heavy cream over low heat until warm (not boiling).
    • Remove from heat and add the chopped dark chocolate. Stir until the chocolate is fully melted and smooth.
    • Stir in the powdered sweetener if you prefer it sweeter.
    • Pour the chocolate over the chilled cream filling and spread evenly.
    • 4. Final Chill:
    • Refrigerate the cake for an additional hour or until fully set. This will give the flavors time to meld and the topping to firm up.
    • 5. Serve:
      • Slice into squares and enjoy your Keto Éclair Cake!
    • Tips:
    • To enhance the flavor, you can add a pinch of espresso powder to the chocolate topping.
    • If you like your filling a bit firmer, chill the cake overnight.
