Keto Eclair Cake

Ingredients:

For the Crust:

  • 2 cups almond flour
  • 1/4 cup melted butter
  • 2 tbsp powdered erythritol or other keto-friendly sweetener
  • 1 tsp vanilla extract

For the Cream Filling:

  • 1 cup heavy cream
  • 1 cup unsweetened almond milk
  • 1/3 cup powdered erythritol
  • 4 large egg yolks
  • 2 tsp vanilla extract
  • 1 tbsp unsalted butter
  • 2 tbsp coconut flour (optional, for thickening)

For the Topping:

  • 3 oz unsweetened dark chocolate (85% or higher)
  • 1/4 cup heavy cream
  • 1 tbsp powdered erythritol (optional for sweetness)

Instructions:

1. Prepare the Crust:

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, mix almond flour, melted butter, powdered sweetener, and vanilla extract until well combined.
  3. Press the mixture into the bottom of an 8×8-inch baking dish to form an even crust.
  4. Bake the crust for 10-12 minutes, or until lightly golden brown. Allow it to cool completely.

2. Make the Cream Filling:

  1. In a saucepan, combine heavy cream, almond milk, powdered sweetener, and egg yolks. Heat over medium heat while whisking constantly.
  2. Continue whisking until the mixture thickens enough to coat the back of a spoon. This may take about 5-7 minutes.
  3. Remove from heat and stir in vanilla extract and butter. If you want it thicker, add coconut flour gradually until desired thickness.
  4. Let the filling cool for about 10 minutes, then pour it over the cooled crust. Spread evenly.
  5. Place the dish in the fridge to chill for at least 1 hour, allowing the filling to set.

3. Make the Chocolate Topping:

  1. In a small saucepan, heat the heavy cream over low heat until warm (not boiling).
  2. Remove from heat and add the chopped dark chocolate. Stir until the chocolate is fully melted and smooth.
  3. Stir in the powdered sweetener if you prefer it sweeter.
  4. Pour the chocolate over the chilled cream filling and spread evenly.

4. Final Chill:

  • Refrigerate the cake for an additional hour or until fully set. This will give the flavors time to meld and the topping to firm up.

5. Serve:

  • Slice into squares and enjoy your Keto Éclair Cake!

Tips:

  • To enhance the flavor, you can add a pinch of espresso powder to the chocolate topping.
  • If you like your filling a bit firmer, chill the cake overnight.
