KETO EASY TEXAS TURTLE SHEET CAKE

Ingredients:
For the Cake:
- 1 ½ cups almond flour
- ½ cup unsweetened cocoa powder
- 1 cup granulated erythritol or your preferred keto sweetener
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 4 large eggs
- ½ cup unsalted butter, melted
- ½ cup unsweetened almond milk
- 1 tsp vanilla extract
For the Topping:
- 1 cup chopped pecans
- ¼ cup unsalted butter
- ¼ cup granulated erythritol or your preferred keto sweetener
- ¼ cup heavy cream
- 1 tsp vanilla extract

Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
- Prepare the Cake Batter:
- In a large bowl, combine almond flour, cocoa powder, erythritol, baking powder, baking soda, and salt.
- In another bowl, whisk together eggs, melted butter, almond milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Bake the Cake:
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely in the pan on a wire rack.
- Prepare the Topping:
- In a medium saucepan over medium heat, melt the butter. Add the erythritol and heavy cream.
- Stir the mixture constantly until it begins to bubble and thicken slightly. This should take about 5 minutes.
- Remove from heat and stir in the vanilla extract.
- Assemble the Cake:
- Once the cake has cooled, spread the caramel topping evenly over the cake.
- Sprinkle the chopped pecans over the top.

- Allow the cake to set for about 10 minutes before slicing. This will help the caramel topping firm up a bit.
