KETO EASY TEXAS TURTLE SHEET CAKE

Ingredients:

For the Cake:

  • 1 ½ cups almond flour
  • ½ cup unsweetened cocoa powder
  • 1 cup granulated erythritol or your preferred keto sweetener
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 4 large eggs
  • ½ cup unsalted butter, melted
  • ½ cup unsweetened almond milk
  • 1 tsp vanilla extract

For the Topping:

  • 1 cup chopped pecans
  • ¼ cup unsalted butter
  • ¼ cup granulated erythritol or your preferred keto sweetener
  • ¼ cup heavy cream
  • 1 tsp vanilla extract

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
  2. Prepare the Cake Batter:
    • In a large bowl, combine almond flour, cocoa powder, erythritol, baking powder, baking soda, and salt.
    • In another bowl, whisk together eggs, melted butter, almond milk, and vanilla extract.
    • Pour the wet ingredients into the dry ingredients and mix until well combined.
  3. Bake the Cake:
    • Pour the batter into the prepared baking pan and spread it evenly.
    • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cake to cool completely in the pan on a wire rack.
  4. Prepare the Topping:
    • In a medium saucepan over medium heat, melt the butter. Add the erythritol and heavy cream.
    • Stir the mixture constantly until it begins to bubble and thicken slightly. This should take about 5 minutes.
    • Remove from heat and stir in the vanilla extract.
  5. Assemble the Cake:
    • Once the cake has cooled, spread the caramel topping evenly over the cake.
    • Sprinkle the chopped pecans over the top.
  6. Serve and Enjoy:
    • Allow the cake to set for about 10 minutes before slicing. This will help the caramel topping firm up a bit.
