Keto Crunch Wrap

Ingredients:

  • 2 large low-carb tortillas (like coconut flour or almond flour tortillas)
  • 1 cup cooked chicken breast (shredded) or ground beef
  • 1/4 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup sour cream
  • 1/4 cup guacamole
  • 1/4 cup fresh lettuce (shredded)
  • 1/4 cup diced tomatoes (optional)
  • 1/4 cup sliced black olives (optional)
  • 1/2 teaspoon taco seasoning (optional)
  • 1 tablespoon olive oil or butter (for frying)

Instructions:

  1. Prepare the Filling:
    • In a bowl, mix the shredded chicken or ground beef with taco seasoning (if using). You can also add a little bit of salt and pepper to taste.
    • If you haven’t already, chop up the lettuce, dice tomatoes, and slice olives.
  2. Assemble the Wrap:
    • Lay one low-carb tortilla flat on a clean surface.
    • Spread a layer of sour cream and guacamole in the center.
    • Add the seasoned chicken or beef mixture on top.
    • Sprinkle shredded cheese over the filling.
    • Add the fresh lettuce, tomatoes, and olives on top for crunch.
  3. Fold the Wrap:
    • Carefully fold in the sides of the tortilla towards the center, then fold the top and bottom edges, creating a wrap shape.
  4. Cook the Wrap:
    • Heat the olive oil or butter in a non-stick skillet over medium heat.
    • Place the wrap in the skillet, seam side down, and cook for 3-4 minutes on each side, until golden brown and crispy.
  5. Serve:
    • Once crispy, remove from the skillet and cut in half. Serve with extra guacamole or sour cream on the side.
