Keto Creamy Garlic Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Chicken:
- Season chicken breasts with salt and pepper on both sides.
- Cook the Chicken:
- Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until golden brown and cooked through. Remove chicken from skillet and set aside.
- Make the Sauce:
- In the same skillet, add minced garlic and cook for about 1 minute until fragrant.
- Combine Ingredients:
- Pour in chicken broth and let it simmer for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
- Add Cream and Cheese:
- Stir in heavy cream, Parmesan cheese, and Italian seasoning. Bring to a simmer and cook for 4-5 minutes, or until the sauce has thickened slightly.
- Finish and Serve:
- Return the chicken breasts to the skillet and spoon some of the sauce over them. Simmer for another 2-3 minutes to heat through.
- Garnish with chopped parsley before serving.
