Keto Creamy Garlic Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Chicken:
    • Season chicken breasts with salt and pepper on both sides.
  2. Cook the Chicken:
    • Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. Make the Sauce:
    • In the same skillet, add minced garlic and cook for about 1 minute until fragrant.
  4. Combine Ingredients:
    • Pour in chicken broth and let it simmer for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
  5. Add Cream and Cheese:
    • Stir in heavy cream, Parmesan cheese, and Italian seasoning. Bring to a simmer and cook for 4-5 minutes, or until the sauce has thickened slightly.
  6. Finish and Serve:
    • Return the chicken breasts to the skillet and spoon some of the sauce over them. Simmer for another 2-3 minutes to heat through.
    • Garnish with chopped parsley before serving.
