Keto Cranberry Orange Bread

Ingredients:
- 1 ½ cups almond flour
- ¼ cup coconut flour
- 1 tsp baking powder
- ¼ tsp salt
- 3 large eggs
- ⅓ cup erythritol (or your preferred keto sweetener)
- ¼ cup unsweetened almond milk
- ¼ cup melted butter or coconut oil
- Zest of 1 large orange
- 2 tbsp fresh orange juice
- ½ cup fresh or frozen cranberries (if frozen, thaw and pat dry)
- 1 tsp vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a medium bowl, whisk together almond flour, coconut flour, baking powder, and salt.
- In another bowl, beat the eggs with erythritol until light and fluffy.
- Add melted butter (or coconut oil), almond milk, orange zest, orange juice, and vanilla extract to the eggs. Mix well.
- Slowly add the dry ingredients to the wet ingredients and mix until just combined.
- Gently fold in the cranberries.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool completely before slicing
