Keto Cranberry Orange Bread

Ingredients:

  • 1 ½ cups almond flour
  • ¼ cup coconut flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 3 large eggs
  • ⅓ cup erythritol (or your preferred keto sweetener)
  • ¼ cup unsweetened almond milk
  • ¼ cup melted butter or coconut oil
  • Zest of 1 large orange
  • 2 tbsp fresh orange juice
  • ½ cup fresh or frozen cranberries (if frozen, thaw and pat dry)
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together almond flour, coconut flour, baking powder, and salt.
  3. In another bowl, beat the eggs with erythritol until light and fluffy.
  4. Add melted butter (or coconut oil), almond milk, orange zest, orange juice, and vanilla extract to the eggs. Mix well.
  5. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
  6. Gently fold in the cranberries.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the bread cool completely before slicing
