Keto Cranberry Cream Cheese Soft Bread

Ingredients:

For the Bread:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup flaxseed meal
  • 1/2 cup erythritol (or your preferred keto-friendly sweetener)
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup unsweetened almond milk
  • 1/4 cup melted butter or coconut oil
  • 1/2 cup cream cheese, softened
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen cranberries (if using frozen, do not thaw)

For the Cream Cheese Swirl:

  • 4 oz cream cheese, softened
  • 2 tbsp erythritol (or your preferred keto-friendly sweetener)
  • 1/2 tsp vanilla extract

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper or grease it well.
  2. Mix Dry Ingredients: In a large bowl, whisk together the almond flour, coconut flour, flaxseed meal, erythritol, baking powder, salt, cinnamon, and nutmeg.
  3. Combine Wet Ingredients: In a separate bowl, beat together the melted butter (or coconut oil), softened cream cheese, eggs, almond milk, and vanilla extract until smooth and creamy.
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until well combined. Fold in the cranberries.
  5. Prepare the Cream Cheese Swirl: In a small bowl, beat the softened cream cheese with the erythritol and vanilla extract until smooth.
  6. Assemble the Bread: Pour half of the bread batter into the prepared loaf pan. Dollop half of the cream cheese mixture over the batter and swirl it lightly with a knife. Repeat with the remaining batter and cream cheese mixture.
  7. Bake: Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, you can cover it loosely with aluminum foil.
  8. Cool and Serve: Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Tips:

  • Store the bread in an airtight container in the refrigerator for up to a week.
  • You can freeze slices of the bread for up to 3 months. To reheat, thaw overnight in the refrigerator and warm in the microwave or oven.
