Keto Cottage Cheese Queso Dip

Ingredients:

  • 1 cup cottage cheese (choose full-fat for keto)
  • 1/2 cup shredded cheddar cheese (or Monterey Jack, for a milder flavor)
  • 1/4 cup heavy cream
  • 2 tbsp cream cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cumin
  • 1/4 tsp paprika (optional for a smoky flavor)
  • Salt and pepper, to taste
  • 1 jalapeño, diced (optional, for some heat)
  • Fresh cilantro or chives, chopped, for garnish

Instructions:

  1. Blend Cottage Cheese: Add the cottage cheese to a blender or food processor, blending until smooth.
  2. Heat Ingredients Together: In a saucepan over medium heat, combine the blended cottage cheese, heavy cream, and cream cheese. Stir until the mixture is well-combined and warm.
  3. Add Spices and Cheese: Add garlic powder, onion powder, cumin, and paprika (if using). Stir in the shredded cheese gradually, allowing it to melt and incorporate. Adjust the seasoning with salt and pepper to taste.
  4. Optional Jalapeño: Stir in diced jalapeño for extra heat, or add some fresh chopped cilantro/chives for garnish.
  5. Serve Warm: Transfer to a serving bowl and enjoy warm with keto-friendly dippers, like cucumber slices, bell pepper strips, or pork rinds.

Tips:

  • Adjust the consistency with a little more heavy cream if it’s too thick.
  • For extra flavor, add a dash of hot sauce or a sprinkle of smoked paprika.
