Keto Cinnamon Roll Protein Muffins

Ingredients:
For the Muffins:
- 2 large eggs
- ¼ cup unsweetened almond milk
- ¼ cup melted butter or coconut oil
- ½ cup almond flour
- ¼ cup vanilla or cinnamon-flavored protein powder
- 2 tbsp coconut flour
- 2 tbsp sweetener (erythritol or monk fruit)
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp vanilla extract
For the Cinnamon Swirl:
- 2 tbsp melted butter
- 1 tbsp cinnamon
- 1 tbsp sweetener
For the Cream Cheese Drizzle:
- 2 tbsp cream cheese (softened)
- 1 tbsp heavy cream
- 1 tbsp powdered sweetener
- ¼ tsp vanilla extract
Instructions:
- Preheat & Prepare: Preheat oven to 350°F (175°C). Line a muffin tin with liners or grease it well.
- Mix the Batter: In a bowl, whisk eggs, almond milk, melted butter, and vanilla extract.
- Add Dry Ingredients: Stir in almond flour, protein powder, coconut flour, sweetener, baking powder, and cinnamon until combined.
- Prepare Cinnamon Swirl: In a small bowl, mix melted butter, cinnamon, and sweetener.
- Layer the Batter: Fill each muffin cup halfway, add a small swirl of the cinnamon mixture, then top with more batter. Swirl gently with a toothpick.
- Bake: Bake for 15-18 minutes or until a toothpick comes out clean.
- Make the Drizzle: Whisk together the softened cream cheese, heavy cream, sweetener, and vanilla until smooth.
- Drizzle & Serve: Once muffins are cooled, drizzle with the cream cheese mixture.
