Keto Cinnamon Roll Protein Muffins

Ingredients:

For the Muffins:

  • 2 large eggs
  • ¼ cup unsweetened almond milk
  • ¼ cup melted butter or coconut oil
  • ½ cup almond flour
  • ¼ cup vanilla or cinnamon-flavored protein powder
  • 2 tbsp coconut flour
  • 2 tbsp sweetener (erythritol or monk fruit)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp vanilla extract

For the Cinnamon Swirl:

  • 2 tbsp melted butter
  • 1 tbsp cinnamon
  • 1 tbsp sweetener

For the Cream Cheese Drizzle:

  • 2 tbsp cream cheese (softened)
  • 1 tbsp heavy cream
  • 1 tbsp powdered sweetener
  • ¼ tsp vanilla extract

Instructions:

  1. Preheat & Prepare: Preheat oven to 350°F (175°C). Line a muffin tin with liners or grease it well.
  2. Mix the Batter: In a bowl, whisk eggs, almond milk, melted butter, and vanilla extract.
  3. Add Dry Ingredients: Stir in almond flour, protein powder, coconut flour, sweetener, baking powder, and cinnamon until combined.
  4. Prepare Cinnamon Swirl: In a small bowl, mix melted butter, cinnamon, and sweetener.
  5. Layer the Batter: Fill each muffin cup halfway, add a small swirl of the cinnamon mixture, then top with more batter. Swirl gently with a toothpick.
  6. Bake: Bake for 15-18 minutes or until a toothpick comes out clean.
  7. Make the Drizzle: Whisk together the softened cream cheese, heavy cream, sweetener, and vanilla until smooth.
  8. Drizzle & Serve: Once muffins are cooled, drizzle with the cream cheese mixture.
