Keto Chocolate Salami

Ingredients:
- 1 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1/4 cup powdered erythritol or another keto-friendly sweetener
- 1/2 cup unsalted butter, softened
- 1/2 cup cream cheese, softened
- 1/2 cup chopped nuts (such as almonds, walnuts, or hazelnuts)
- 1/4 cup sugar-free chocolate chips or chopped sugar-free dark chocolate
- 1 tsp vanilla extract
- 1/4 tsp salt
- Powdered erythritol, for coating (optional)
Instructions:
- Mix Dry Ingredients: In a medium bowl, combine almond flour, cocoa powder, and powdered erythritol.
- Cream Butter and Cream Cheese: In a separate bowl, beat the softened butter and cream cheese until smooth and creamy. Add the vanilla extract and mix well.
- Combine Ingredients: Gradually add the dry ingredients to the butter mixture, mixing until well combined. Stir in the chopped nuts and sugar-free chocolate chips.
- Shape the Salami: Place the mixture onto a large piece of plastic wrap. Shape it into a log or salami-like form, then wrap it tightly in the plastic wrap. Refrigerate for at least 2 hours or until firm.
- Optional Coating: If desired, roll the chilled salami in powdered erythritol to coat it before serving.
- Serve: Slice into rounds and enjoy. Store in an airtight container in the refrigerator for up to a week.
