Keto Chocolate Salami

Ingredients:

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup powdered erythritol or another keto-friendly sweetener
  • 1/2 cup unsalted butter, softened
  • 1/2 cup cream cheese, softened
  • 1/2 cup chopped nuts (such as almonds, walnuts, or hazelnuts)
  • 1/4 cup sugar-free chocolate chips or chopped sugar-free dark chocolate
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Powdered erythritol, for coating (optional)

Instructions:

  1. Mix Dry Ingredients: In a medium bowl, combine almond flour, cocoa powder, and powdered erythritol.
  2. Cream Butter and Cream Cheese: In a separate bowl, beat the softened butter and cream cheese until smooth and creamy. Add the vanilla extract and mix well.
  3. Combine Ingredients: Gradually add the dry ingredients to the butter mixture, mixing until well combined. Stir in the chopped nuts and sugar-free chocolate chips.
  4. Shape the Salami: Place the mixture onto a large piece of plastic wrap. Shape it into a log or salami-like form, then wrap it tightly in the plastic wrap. Refrigerate for at least 2 hours or until firm.
  5. Optional Coating: If desired, roll the chilled salami in powdered erythritol to coat it before serving.
  6. Serve: Slice into rounds and enjoy. Store in an airtight container in the refrigerator for up to a week.
