Keto Chocolate Mousse

Ingredients:
- 1 cup heavy whipping cream (chilled)
- 3 tbsp unsweetened cocoa powder
- 2-3 tbsp powdered erythritol (or your favorite keto-friendly sweetener)
- 1 tsp vanilla extract
- A pinch of salt
Optional toppings:
- Whipped cream
- Dark chocolate shavings (85% or higher cocoa)
- Berries (in moderation)
Instructions:
- Whip the cream: In a cold mixing bowl, whip the heavy cream using an electric mixer until soft peaks form.
- Add cocoa & sweetener: Gradually sift in the unsweetened cocoa powder and sweetener. Continue whipping until stiff peaks form.
- Add vanilla & salt: Add vanilla extract and a pinch of salt, then gently fold everything together to combine.
- Chill: Spoon the mousse into serving cups and refrigerate for at least 1 hour before serving.
- Serve: Garnish with optional toppings like a dollop of whipped cream, a few dark chocolate shavings, or some fresh berries.
