Keto Chocolate Mousse

Ingredients:

  • 1 cup heavy whipping cream (chilled)
  • 3 tbsp unsweetened cocoa powder
  • 2-3 tbsp powdered erythritol (or your favorite keto-friendly sweetener)
  • 1 tsp vanilla extract
  • A pinch of salt

Optional toppings:

  • Whipped cream
  • Dark chocolate shavings (85% or higher cocoa)
  • Berries (in moderation)

Instructions:

  1. Whip the cream: In a cold mixing bowl, whip the heavy cream using an electric mixer until soft peaks form.
  2. Add cocoa & sweetener: Gradually sift in the unsweetened cocoa powder and sweetener. Continue whipping until stiff peaks form.
  3. Add vanilla & salt: Add vanilla extract and a pinch of salt, then gently fold everything together to combine.
  4. Chill: Spoon the mousse into serving cups and refrigerate for at least 1 hour before serving.
  5. Serve: Garnish with optional toppings like a dollop of whipped cream, a few dark chocolate shavings, or some fresh berries.
