Instructions
- Prepare a pan: Line an 8×8-inch pan or a small baking sheet with parchment paper, leaving some overhang for easy removal.
- Melt the chocolate: In a microwave-safe bowl, add the chocolate chips and coconut oil. Microwave in 20-second intervals, stirring in between, until smooth and fully melted. Alternatively, use a double boiler on the stove.
- Add flavorings: Stir in the almond butter (if using), vanilla extract, and a pinch of salt into the melted chocolate mixture until smooth.
- Add the crunch: Gently fold in the keto-friendly cereal until evenly coated with the chocolate mixture.
- Spread in pan: Pour the mixture into the prepared pan and spread it evenly. Tap the pan lightly on the counter to remove any air bubbles.
- Chill: Place the pan in the refrigerator for about 1–2 hours, or until the chocolate is set.
- Slice and serve: Once firm, remove the bars from the pan using the parchment overhang. Cut into squares or bars.
- Store: Keep these bars in an airtight container in the refrigerator for up to a week or freeze for longer storage.
Tips
- Keto cereal options: Choose a low-carb cereal like pork rinds, puffed quinoa (in small amounts), or a mix of chopped nuts like almonds, pecans, or macadamia nuts for added flavor and crunch.
- Add-ins: You can mix in a handful of unsweetened coconut flakes or chopped nuts for extra texture.
Enjoy these deliciously crunchy keto chocolate bars whenever you’re craving something sweet but low-carb!
