KETO CHOCOLATE COCONUT CRUNCH BARS

Ingredients:

For the Bars:

  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond flour
  • 1/4 cup chia seeds (optional for extra crunch)
  • 1/4 cup coconut oil or unsalted butter
  • 1/4 cup keto-friendly sweetener (such as erythritol, monk fruit sweetener, or stevia, adjust to taste)
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (such as almonds or pecans, optional)

For the Chocolate Coating:

  • 1/2 cup sugar-free chocolate chips (or keto-friendly dark chocolate, chopped)
  • 1 tablespoon coconut oil

Instructions:

  1. Prepare the Base:
    • In a medium bowl, mix together the shredded coconut, almond flour, and chia seeds (if using).
    • In a small saucepan, melt the coconut oil (or butter) over low heat. Stir in the sweetener and vanilla extract until well combined.
    • Pour the melted mixture into the dry ingredients and mix until everything is evenly coated and combined. Stir in the chopped nuts if you’re using them.
  2. Form the Bars:
    • Line a small baking dish (about 8×8 inches) with parchment paper or lightly grease it.
    • Press the mixture firmly into the bottom of the dish to create an even layer. Use the back of a spoon or your hands to press it down firmly.
  3. Chill the Base:
    • Place the dish in the refrigerator for at least 30 minutes to allow the base to firm up.
  4. Prepare the Chocolate Coating:
    • In a microwave-safe bowl or using a double boiler, melt the sugar-free chocolate chips and coconut oil together, stirring until smooth.
    • Pour the melted chocolate over the chilled coconut base, spreading it evenly with a spatula.
  5. Chill and Set:
    • Return the dish to the refrigerator and chill for another 30 minutes or until the chocolate is fully set and firm.
  6. Cut and Serve:
    • Once set, lift the bars out of the dish using the parchment paper and cut them into squares or bars.
    • Store in an airtight container in the refrigerator for up to 2 weeks.
