Ingredients
- 3 tbsp almond flour
- 1 tbsp erythritol (or monk fruit sweetener)
- 1/4 tsp baking powder
- 1 tbsp unsalted butter, melted
- 1 tbsp unsweetened almond milk
- 1/4 tsp vanilla extract
- 1 large egg yolk (or whole egg for larger cake)
- 1–2 tbsp sugar-free chocolate chips
Instructions
- Mix dry ingredients: In a microwave-safe mug, stir almond flour, sweetener, and baking powder.
- Add wet ingredients: Stir in melted butter, almond milk, vanilla, and egg yolk until smooth.
- Add chocolate chips: Fold in sugar-free chocolate chips.
- Microwave: Cook for 50–70 seconds (time may vary depending on microwave). The top should look just set — don’t overcook.
- Serve: Enjoy warm, optionally topped with sugar-free whipped cream or a drizzle of sugar-free chocolate syrup.
