Keto Chocolate Chip Mug Cake

Ingredients

  • 3 tbsp almond flour
  • 1 tbsp erythritol (or monk fruit sweetener)
  • 1/4 tsp baking powder
  • 1 tbsp unsalted butter, melted
  • 1 tbsp unsweetened almond milk
  • 1/4 tsp vanilla extract
  • 1 large egg yolk (or whole egg for larger cake)
  • 1–2 tbsp sugar-free chocolate chips

Instructions

  1. Mix dry ingredients: In a microwave-safe mug, stir almond flour, sweetener, and baking powder.
  2. Add wet ingredients: Stir in melted butter, almond milk, vanilla, and egg yolk until smooth.
  3. Add chocolate chips: Fold in sugar-free chocolate chips.
  4. Microwave: Cook for 50–70 seconds (time may vary depending on microwave). The top should look just set — don’t overcook.
  5. Serve: Enjoy warm, optionally topped with sugar-free whipped cream or a drizzle of sugar-free chocolate syrup.

Pro Tip: If you prefer oven baking, bake at 175°C (350°F) for about 10–12 minutes in an oven-safe ramekin.
