Keto Chicken Schnitzel

Ingredients:

  • 2 boneless chicken breasts (sliced into thin fillets or pounded flat)
  • 1 egg
  • 1 tbsp heavy cream
  • 1/2 cup almond flour
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt & pepper to taste
  • 2–3 tbsp olive oil or avocado oil (for frying)

Instructions:

  1. Prep the Chicken
    Slice or pound chicken into thin schnitzel-style fillets. Pat dry and season with salt and pepper.
  2. Set up Breading Station
    In one bowl: beat the egg with heavy cream.
    In another: mix almond flour, parmesan, garlic powder, paprika, salt & pepper.
  3. Coat the Chicken
    Dip each chicken fillet into the egg mix, then coat evenly in the almond flour mixture. Press gently so it sticks well.
  4. Fry it Up
    Heat oil in a pan over medium heat. Add schnitzels and cook 3–4 mins per side or until golden and cooked through.
  5. Rest & Serve
    Let them rest on a paper towel to remove excess oil. Serve with a wedge of lemon or keto garlic mayo!
