Keto Chicken Schnitzel

Ingredients:
- 2 boneless chicken breasts (sliced into thin fillets or pounded flat)
- 1 egg
- 1 tbsp heavy cream
- 1/2 cup almond flour
- 1/4 cup grated parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt & pepper to taste
- 2–3 tbsp olive oil or avocado oil (for frying)
Instructions:
- Prep the Chicken
Slice or pound chicken into thin schnitzel-style fillets. Pat dry and season with salt and pepper. - Set up Breading Station
In one bowl: beat the egg with heavy cream.
In another: mix almond flour, parmesan, garlic powder, paprika, salt & pepper. - Coat the Chicken
Dip each chicken fillet into the egg mix, then coat evenly in the almond flour mixture. Press gently so it sticks well. - Fry it Up
Heat oil in a pan over medium heat. Add schnitzels and cook 3–4 mins per side or until golden and cooked through. - Rest & Serve
Let them rest on a paper towel to remove excess oil. Serve with a wedge of lemon or keto garlic mayo!
