Keto Chicken Legs

Ingredients:
- 4 chicken legs (drumsticks)
- 2 tbsp olive oil (or avocado oil)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika (smoked or regular)
- 1/2 tsp cayenne pepper (optional, for heat)
- Salt and pepper to taste
- 1 tbsp fresh lemon juice (optional for extra zest)
- Fresh herbs like rosemary or thyme (optional)
Instructions:
- Preheat the Oven: Set the oven to 425°F (220°C) to get it nice and hot for crispy skin.
- Prepare the Chicken: Pat the chicken legs dry with paper towels. This is important to get crispy skin.
- Season the Chicken: In a small bowl, mix the olive oil, garlic powder, onion powder, paprika, cayenne pepper (if using), salt, and pepper. Rub this mixture all over the chicken legs, making sure they are fully coated. If you like, squeeze a little lemon juice over them for a fresh kick.
- Bake: Place the chicken legs on a baking sheet lined with parchment paper or foil. For extra crispiness, you can place them on a wire rack so air circulates around them while baking.
- Cook: Bake for about 35-40 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) and the skin is golden brown and crispy.
- Optional: Garnish with fresh herbs like rosemary or thyme before serving.
