Keto Chicken and Broccoli Lasagna

Ingredients:

For the Chicken Layer:

  • 2 cups cooked chicken, shredded
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 egg
  • Salt and pepper to taste

For the Broccoli Layer:

  • 2 cups broccoli florets, steamed and chopped
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste

For the “Noodles”:

  • 2 medium zucchinis, thinly sliced lengthwise (use a mandoline for best results)

For the Topping:

  • 1 cup shredded mozzarella cheese

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken Mixture:
    • In a large bowl, combine the shredded chicken, ricotta cheese, 1 cup shredded mozzarella cheese, egg, salt, and pepper. Mix until well combined.
  3. Prepare the Broccoli Mixture:
    • In a medium saucepan, heat the heavy cream over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
    • Stir in the grated Parmesan cheese until melted and smooth.
    • Add the chopped, steamed broccoli to the sauce. Season with salt and pepper to taste and mix well.
  4. Prepare the Zucchini Noodles:
    • Thinly slice the zucchinis lengthwise using a mandoline or a sharp knife. Lightly salt the slices and let them sit for 10 minutes to draw out excess moisture. Pat dry with paper towels.
  5. Assemble the Lasagna:
    • In a 9×13-inch baking dish, spread a thin layer of the broccoli mixture on the bottom.
    • Place a layer of zucchini slices over the broccoli mixture.
    • Spread half of the chicken mixture over the zucchini slices.
    • Add another layer of zucchini slices.
    • Spread the remaining broccoli mixture over the zucchini slices.
    • Add a final layer of zucchini slices.
    • Spread the remaining chicken mixture over the zucchini slices.
    • Top with the shredded mozzarella cheese.
  6. Bake:
    • Cover the baking dish with foil and bake for 25 minutes.
    • Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
  7. Serve:
    • Let the lasagna sit for about 10 minutes before slicing and serving.
