Keto Chicken and Broccoli Lasagna

Ingredients:
For the Chicken Layer:
- 2 cups cooked chicken, shredded
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 egg
- Salt and pepper to taste
For the Broccoli Layer:
- 2 cups broccoli florets, steamed and chopped
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
For the “Noodles”:
- 2 medium zucchinis, thinly sliced lengthwise (use a mandoline for best results)
For the Topping:
- 1 cup shredded mozzarella cheese

Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Chicken Mixture:
- In a large bowl, combine the shredded chicken, ricotta cheese, 1 cup shredded mozzarella cheese, egg, salt, and pepper. Mix until well combined.
- Prepare the Broccoli Mixture:
- In a medium saucepan, heat the heavy cream over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
- Stir in the grated Parmesan cheese until melted and smooth.
- Add the chopped, steamed broccoli to the sauce. Season with salt and pepper to taste and mix well.
- Prepare the Zucchini Noodles:
- Thinly slice the zucchinis lengthwise using a mandoline or a sharp knife. Lightly salt the slices and let them sit for 10 minutes to draw out excess moisture. Pat dry with paper towels.
- Assemble the Lasagna:
- In a 9×13-inch baking dish, spread a thin layer of the broccoli mixture on the bottom.
- Place a layer of zucchini slices over the broccoli mixture.
- Spread half of the chicken mixture over the zucchini slices.
- Add another layer of zucchini slices.
- Spread the remaining broccoli mixture over the zucchini slices.
- Add a final layer of zucchini slices.
- Spread the remaining chicken mixture over the zucchini slices.
- Top with the shredded mozzarella cheese.
- Bake:
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
- Serve:
- Let the lasagna sit for about 10 minutes before slicing and serving.
