Keto Cheesecake Stuffed Strawberries

Ingredients:

  • 1 lb fresh strawberries
  • 8 oz cream cheese, softened
  • 1/4 cup powdered erythritol or your preferred keto-friendly sweetener
  • 1 tsp vanilla extract
  • 1 tbsp heavy whipping cream
  • Optional: grated dark chocolate or crushed nuts for garnish

Instructions:

  1. Prepare the Strawberries:
    • Wash the strawberries and dry them thoroughly.
    • Cut off the green tops and hull the strawberries, creating a small cavity for the cheesecake filling.
  2. Make the Cheesecake Filling:
    • In a medium bowl, combine the softened cream cheese, powdered erythritol, vanilla extract, and heavy whipping cream.
    • Beat with an electric mixer until smooth and creamy.
  3. Stuff the Strawberries:
    • Spoon the cheesecake mixture into a piping bag or a ziplock bag with the corner snipped off.
    • Pipe the filling into the hulled strawberries, filling them generously.
  4. Optional Garnish:
    • If desired, sprinkle grated dark chocolate or crushed nuts over the top of the stuffed strawberries.
  5. Chill and Serve:
    • Place the stuffed strawberries on a plate or tray.
    • Refrigerate for at least 30 minutes to allow the filling to set.
    • Serve chilled.
