Keto Cheeseburger Soup

Ingredients

  • 500g (1 lb) ground beef
  • 2 tbsp butter
  • 1 small onion, diced (or 1/2 tsp onion powder for fewer carbs)
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 1 cup heavy cream
  • 200g (2 cups) shredded cheddar cheese
  • 1/2 tsp paprika
  • Salt & pepper to taste
  • Optional toppings: chopped pickles, crispy bacon bits, extra shredded cheese

Instructions

  1. Cook beef:
    • In a large pot, melt butter over medium heat.
    • Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
  2. Add aromatics:
    • Stir in onion and garlic, cooking for 2–3 minutes until fragrant (skip onion if using powder; add later with spices).
  3. Simmer:
    • Pour in beef broth and bring to a gentle boil.
    • Reduce heat and simmer for 10 minutes.
  4. Make it creamy:
    • Stir in heavy cream, paprika, salt, and pepper.
    • Gradually add cheddar cheese, stirring until melted and soup is smooth.
  5. Serve:
    • Ladle into bowls and top with chopped pickles, bacon bits, or extra cheese for that real cheeseburger vibe.

Pro Tip: For a thicker soup, stir in 1/2 tsp xanthan gum at the end and simmer for 2 minutes.
