Keto Cheeseburger Soup

Ingredients
- 500g (1 lb) ground beef
- 2 tbsp butter
- 1 small onion, diced (or 1/2 tsp onion powder for fewer carbs)
- 2 cloves garlic, minced
- 3 cups beef broth
- 1 cup heavy cream
- 200g (2 cups) shredded cheddar cheese
- 1/2 tsp paprika
- Salt & pepper to taste
- Optional toppings: chopped pickles, crispy bacon bits, extra shredded cheese
Instructions
- Cook beef:
- In a large pot, melt butter over medium heat.
- Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
- Add aromatics:
- Stir in onion and garlic, cooking for 2–3 minutes until fragrant (skip onion if using powder; add later with spices).
- Simmer:
- Pour in beef broth and bring to a gentle boil.
- Reduce heat and simmer for 10 minutes.
- Make it creamy:
- Stir in heavy cream, paprika, salt, and pepper.
- Gradually add cheddar cheese, stirring until melted and soup is smooth.
- Serve:
- Ladle into bowls and top with chopped pickles, bacon bits, or extra cheese for that real cheeseburger vibe.
