🧾 Ingredients:
For the Meatballs:
- 1 lb ground beef (80/20 or 85/15 works best)
- 1 large egg
- 1/3 cup almond flour
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 oz cheddar cheese, cut into 16 small cubes (or use pre-cut cheddar cubes)
Optional:
- 1 tbsp fresh parsley, chopped (for garnish)
- Low-carb marinara or ranch for dipping
👨🍳 Instructions:
1. Preheat Oven:
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper or foil and lightly grease.
2. Make Meatball Mixture:
- In a large bowl, combine ground beef, egg, almond flour, Parmesan, garlic, Italian seasoning, onion powder, salt, and pepper.
- Mix with your hands or a spoon until evenly combined (don’t overmix).
3. Stuff with Cheese:
- Divide the mixture into 16 equal portions.
- Flatten each portion slightly in your hand, place a cube of cheddar in the center, and roll the meat around it to seal completely.
4. Bake:
- Place meatballs evenly on the prepared baking sheet.
- Bake for 18–22 minutes, or until browned and cooked through (internal temp should reach 160°F / 71°C).
5. Serve:
- Garnish with parsley if desired.
- Serve hot with your favorite low-carb dip or over zoodles, cauliflower rice, or salad.
