🧾 Ingredients:

For the Meatballs:

  • 1 lb ground beef (80/20 or 85/15 works best)
  • 1 large egg
  • 1/3 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 oz cheddar cheese, cut into 16 small cubes (or use pre-cut cheddar cubes)

Optional:

  • 1 tbsp fresh parsley, chopped (for garnish)
  • Low-carb marinara or ranch for dipping

👨‍🍳 Instructions:

1. Preheat Oven:

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or foil and lightly grease.

2. Make Meatball Mixture:

  • In a large bowl, combine ground beef, egg, almond flour, Parmesan, garlic, Italian seasoning, onion powder, salt, and pepper.
  • Mix with your hands or a spoon until evenly combined (don’t overmix).

3. Stuff with Cheese:

  • Divide the mixture into 16 equal portions.
  • Flatten each portion slightly in your hand, place a cube of cheddar in the center, and roll the meat around it to seal completely.

4. Bake:

  • Place meatballs evenly on the prepared baking sheet.
  • Bake for 18–22 minutes, or until browned and cooked through (internal temp should reach 160°F / 71°C).

5. Serve:

  • Garnish with parsley if desired.
  • Serve hot with your favorite low-carb dip or over zoodles, cauliflower rice, or salad.

📝 Tips:

  • Spice it up: Add red pepper flakes or a bit of hot sauce to the meat mixture.
  • Air fryer option: Cook at 375°F for 12–15 minutes, flipping halfway.
  • Cheese options: Swap cheddar for mozzarella, pepper jack, or gouda for a different flavor.
