Keto Cheddar Stuffed Meatballs

Ingredients:
- 500g (1 lb) ground beef (80/20 or 85/15)
- 1 egg
- 1/4 cup almond flour
- 1/4 cup grated parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika (optional)
- Salt & black pepper to taste
- 100g cheddar cheese, cubed into 1/2-inch chunks
- 1 tbsp olive oil (for greasing or pan frying)
- Fresh parsley (optional for garnish)
🥣 Instructions:
- Preheat oven to 200°C (400°F). Lightly grease a baking tray or line with parchment paper.
- Mix the meatball base:
In a large bowl, combine ground beef, egg, almond flour, parmesan, and all seasonings. Mix until just combined (don’t overmix). - Shape meatballs:
Take a small portion of meat mixture (about 2 tablespoons), flatten it in your palm, place a cheddar cube in the center, and wrap the meat around it to form a ball. - Repeat for all meatballs.
- Bake:
Place stuffed meatballs on the tray and bake for 20-25 minutes or until golden and cooked through. (Optional: Sear them in a skillet for 2-3 minutes before baking for extra crust!) - Garnish with chopped parsley and serve hot with keto-friendly marinara or dip of choice.
