Keto Cheddar Stuffed Meatballs

Ingredients:

  • 500g (1 lb) ground beef (80/20 or 85/15)
  • 1 egg
  • 1/4 cup almond flour
  • 1/4 cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika (optional)
  • Salt & black pepper to taste
  • 100g cheddar cheese, cubed into 1/2-inch chunks
  • 1 tbsp olive oil (for greasing or pan frying)
  • Fresh parsley (optional for garnish)

🥣 Instructions:

  1. Preheat oven to 200°C (400°F). Lightly grease a baking tray or line with parchment paper.
  2. Mix the meatball base:
    In a large bowl, combine ground beef, egg, almond flour, parmesan, and all seasonings. Mix until just combined (don’t overmix).
  3. Shape meatballs:
    Take a small portion of meat mixture (about 2 tablespoons), flatten it in your palm, place a cheddar cube in the center, and wrap the meat around it to form a ball.
  4. Repeat for all meatballs.
  5. Bake:
    Place stuffed meatballs on the tray and bake for 20-25 minutes or until golden and cooked through. (Optional: Sear them in a skillet for 2-3 minutes before baking for extra crust!)
  6. Garnish with chopped parsley and serve hot with keto-friendly marinara or dip of choice.
