Keto Cheddar Stuffed Meatballs

Ingredients:

  • 500g (1 lb) ground beef (80/20)
  • 1 egg
  • 1/2 cup almond flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt & pepper to taste
  • 100g cheddar cheese, cut into small cubes
  • 1 tbsp olive oil (for frying or brushing if baking)
  • Optional: parsley for garnish

👩‍🍳 Instructions:

  1. Preheat oven to 200°C (400°F) OR heat a skillet on medium if pan-frying.
  2. In a bowl, mix ground beef, egg, almond flour, garlic powder, onion powder, paprika, salt, and pepper.
  3. Take a small portion of the mixture, flatten it in your hand, place a cube of cheddar in the center, and wrap the meat around it to form a ball. Repeat.
  4. Cooking Options:
    • Oven: Place meatballs on a lined tray, brush with olive oil, and bake for 18–20 mins.
    • Pan: Heat olive oil and cook meatballs, turning occasionally, until browned and cooked through.
  5. Garnish with parsley and serve with a side of low-carb marinara or a creamy dip!

💡 Tips:

  • Use sharp cheddar for extra flavor.
  • Want spice? Add chili flakes or jalapeño inside with the cheese
