Keto Cheddar Stuffed Meatballs

Ingredients:
- 500g (1 lb) ground beef (80/20)
- 1 egg
- 1/2 cup almond flour
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- Salt & pepper to taste
- 100g cheddar cheese, cut into small cubes
- 1 tbsp olive oil (for frying or brushing if baking)
- Optional: parsley for garnish
👩🍳 Instructions:
- Preheat oven to 200°C (400°F) OR heat a skillet on medium if pan-frying.
- In a bowl, mix ground beef, egg, almond flour, garlic powder, onion powder, paprika, salt, and pepper.
- Take a small portion of the mixture, flatten it in your hand, place a cube of cheddar in the center, and wrap the meat around it to form a ball. Repeat.
- Cooking Options:
- Oven: Place meatballs on a lined tray, brush with olive oil, and bake for 18–20 mins.
- Pan: Heat olive oil and cook meatballs, turning occasionally, until browned and cooked through.
- Garnish with parsley and serve with a side of low-carb marinara or a creamy dip!
💡 Tips:
- Use sharp cheddar for extra flavor.
- Want spice? Add chili flakes or jalapeño inside with the cheese
