Keto Cheddar Leek Cauliflower Mash

Ingredients:

  • 1 large head of cauliflower (about 6 cups florets)
  • 2 tablespoons olive oil or butter
  • 1 large leek, white and light green parts only, cleaned and thinly sliced
  • 2 cloves garlic, minced
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup heavy cream (or more, to taste)
  • Salt and black pepper, to taste
  • Optional: chopped chives for garnish

Instructions:

  1. Prepare the Cauliflower:
    • Cut the cauliflower into florets.
    • Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until tender, about 8-10 minutes. Drain well.
  2. Cook the Leeks:
    • While the cauliflower is cooking, heat olive oil or butter in a large skillet over medium heat.
    • Add the sliced leeks and cook, stirring occasionally, until they are softened and beginning to caramelize, about 8-10 minutes.
    • Add the minced garlic and cook for an additional 1-2 minutes, until fragrant. Remove from heat.
  3. Mash the Cauliflower:
    • Transfer the cooked cauliflower to a large mixing bowl or food processor.
    • Use an immersion blender, or blend in batches in a food processor, until smooth. You may need to add a bit of the heavy cream to help with blending.
  4. Combine Ingredients:
    • Stir the cooked leeks and garlic into the cauliflower mash.
    • Gradually mix in the shredded cheddar cheese until fully melted and combined.
    • Add heavy cream to reach your desired consistency. Season with salt and black pepper to taste.
  5. Serve:
    • Transfer the mash to a serving bowl.
    • Garnish with chopped chives if desired.
