Keto Cheddar Leek Cauliflower Mash
Ingredients:
- 1 large head of cauliflower (about 6 cups florets)
- 2 tablespoons olive oil or butter
- 1 large leek, white and light green parts only, cleaned and thinly sliced
- 2 cloves garlic, minced
- 1 cup shredded sharp cheddar cheese
- 1/4 cup heavy cream (or more, to taste)
- Salt and black pepper, to taste
- Optional: chopped chives for garnish

Instructions:
- Prepare the Cauliflower:
- Cut the cauliflower into florets.
- Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until tender, about 8-10 minutes. Drain well.
- Cook the Leeks:
- While the cauliflower is cooking, heat olive oil or butter in a large skillet over medium heat.
- Add the sliced leeks and cook, stirring occasionally, until they are softened and beginning to caramelize, about 8-10 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes, until fragrant. Remove from heat.
- Mash the Cauliflower:
- Transfer the cooked cauliflower to a large mixing bowl or food processor.
- Use an immersion blender, or blend in batches in a food processor, until smooth. You may need to add a bit of the heavy cream to help with blending.
- Combine Ingredients:
- Stir the cooked leeks and garlic into the cauliflower mash.
- Gradually mix in the shredded cheddar cheese until fully melted and combined.
- Add heavy cream to reach your desired consistency. Season with salt and black pepper to taste.
- Serve:
- Transfer the mash to a serving bowl.
- Garnish with chopped chives if desired.
