Ingredients
For the Dough:
- 1 ½ cups shredded mozzarella cheese
- 2 oz cream cheese
- 1 cup almond flour
- 1 tsp baking powder
- 1 large egg
- ½ tsp garlic powder (optional, for extra flavor)
- ½ tsp Italian seasoning
For the Filling:
- ½ cup ricotta cheese
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- ¼ cup pepperoni or cooked sausage (chopped)
- 2 tbsp low-carb marinara sauce (optional)
- 2 tbsp chopped spinach (optional)

Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Make the Dough:
- In a microwave-safe bowl, combine shredded mozzarella and cream cheese. Microwave for 1 minute, stirring halfway, until melted and combined.
- Add almond flour, baking powder, egg, garlic powder, and Italian seasoning to the cheese mixture. Mix well until a dough forms. Knead it with your hands if necessary.
- Prepare the Filling:
- In a small bowl, mix ricotta, mozzarella, Parmesan, pepperoni (or sausage), marinara (if using), and spinach. Set aside.
- Assemble the Chunks:
- Roll the dough between two sheets of parchment paper into a rectangle, about ¼ inch thick.
- Cut the dough into 3-inch squares.
- Place 1-2 teaspoons of filling in the center of each square.
- Fold the squares into triangles or rectangles, sealing the edges by pressing them together with your fingers or a fork.
- Bake:
- Arrange the calzone chunks on the prepared baking sheet.
- Bake for 12-15 minutes, or until golden brown.
