Ingredients

For the Dough:

  • ½ tsp Italian seasoning

For the Filling:

  • ½ cup ricotta cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • ¼ cup pepperoni or cooked sausage (chopped)
  • 2 tbsp low-carb marinara sauce (optional)
  • 2 tbsp chopped spinach (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Make the Dough:
    • In a microwave-safe bowl, combine shredded mozzarella and cream cheese. Microwave for 1 minute, stirring halfway, until melted and combined.
    • Add almond flour, baking powder, egg, garlic powder, and Italian seasoning to the cheese mixture. Mix well until a dough forms. Knead it with your hands if necessary.
  3. Prepare the Filling:
    • In a small bowl, mix ricotta, mozzarella, Parmesan, pepperoni (or sausage), marinara (if using), and spinach. Set aside.
  4. Assemble the Chunks:
    • Roll the dough between two sheets of parchment paper into a rectangle, about ¼ inch thick.
    • Cut the dough into 3-inch squares.
    • Place 1-2 teaspoons of filling in the center of each square.
    • Fold the squares into triangles or rectangles, sealing the edges by pressing them together with your fingers or a fork.
  5. Bake:
    • Arrange the calzone chunks on the prepared baking sheet.
    • Bake for 12-15 minutes, or until golden brown.
  6. Serve and Enjoy:
    • Let the chunks cool slightly before serving. Enjoy warm with a side of low-carb marinara for dipping!
