Keto Cabbage Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef (or ground turkey for a leaner option)
  • 1/2 small head of green cabbage, chopped into small pieces
  • 2 carrots, peeled and sliced (in moderation, as they contain some carbs)
  • 2 celery stalks, sliced
  • 1 can (14.5 ounces) diced tomatoes (no sugar added)
  • 8 cups beef or vegetable broth (low-sodium if preferred)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and black pepper to taste
  • Fresh parsley, for garnish (optional)

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic. Sauté for a few minutes until the onions become translucent.
  3. Add the ground beef (or turkey) to the pot. Cook, breaking it into smaller pieces with a spoon, until it’s browned and cooked through.
  4. Stir in the chopped cabbage, sliced carrots, and celery. Cook for a few minutes until the vegetables begin to soften.
  5. Add the diced tomatoes, beef (or vegetable) broth, dried thyme, dried oregano, and a bay leaf. Season with salt and black pepper to taste.
  6. Bring the soup to a boil, then reduce the heat to a simmer. Cover and let it cook for about 20-30 minutes or until the vegetables are tender.
  7. Taste the soup and adjust the seasonings as needed.
  8. Remove the bay leaf and discard it.
  9. Serve your Keto Cabbage Soup hot, garnished with fresh parsley if desired.
