Keto Cabbage Soup
Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef (or ground turkey for a leaner option)
- 1/2 small head of green cabbage, chopped into small pieces
- 2 carrots, peeled and sliced (in moderation, as they contain some carbs)
- 2 celery stalks, sliced
- 1 can (14.5 ounces) diced tomatoes (no sugar added)
- 8 cups beef or vegetable broth (low-sodium if preferred)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and black pepper to taste
- Fresh parsley, for garnish (optional)
Instructions:
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic. Sauté for a few minutes until the onions become translucent.
- Add the ground beef (or turkey) to the pot. Cook, breaking it into smaller pieces with a spoon, until it’s browned and cooked through.
- Stir in the chopped cabbage, sliced carrots, and celery. Cook for a few minutes until the vegetables begin to soften.
- Add the diced tomatoes, beef (or vegetable) broth, dried thyme, dried oregano, and a bay leaf. Season with salt and black pepper to taste.
- Bring the soup to a boil, then reduce the heat to a simmer. Cover and let it cook for about 20-30 minutes or until the vegetables are tender.
- Taste the soup and adjust the seasonings as needed.
- Remove the bay leaf and discard it.
- Serve your Keto Cabbage Soup hot, garnished with fresh parsley if desired.
