Keto butter cake

Ingredients:

  • For the cake:
    • 2 cups almond flour
    • 1/4 cup coconut flour
    • 1 cup granulated erythritol (or your preferred keto sweetener)
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/2 cup unsalted butter, melted
    • 4 large eggs
    • 1/2 cup unsweetened almond milk (or other low-carb milk)
    • 1 teaspoon vanilla extract
  • For the topping:
    • 1/4 cup unsalted butter, melted
    • 1/2 cup granulated erythritol (or your preferred keto sweetener)
    • 1 teaspoon cinnamon

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking pan or line it with parchment paper.
  2. Prepare the cake batter:
    • In a large bowl, combine the almond flour, coconut flour, erythritol, baking powder, and salt.
    • In another bowl, whisk together the melted butter, eggs, almond milk, and vanilla extract.
    • Pour the wet ingredients into the dry ingredients and mix until well combined.
  3. Bake the cake:
    • Pour the batter into the prepared baking pan and spread it out evenly.
    • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  4. Prepare the topping:
    • While the cake is baking, mix together the melted butter, erythritol, and cinnamon for the topping.
  5. Add the topping:
    • Once the cake is done baking, remove it from the oven and immediately pour the topping mixture over the hot cake.
    • Spread the topping evenly over the cake and let it soak in as the cake cools.
  6. Cool and serve:
