Keto Burger Buns

Ingredients (Makes 4–6 buns):
- 1 cup almond flour
- 1 tbsp coconut flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 3 large eggs
- 1/2 cup Greek yogurt (or sour cream)
- 1/2 cup shredded mozzarella cheese (optional, for extra fluffiness)
- 1 tbsp psyllium husk (for texture, optional but recommended)
- 1 tsp apple cider vinegar
- 1 tbsp sesame seeds (for topping)
Instructions:
- Preheat oven to 180°C (350°F). Line a baking tray with parchment paper.
- Mix dry ingredients: In a bowl, combine almond flour, coconut flour, baking powder, salt, and psyllium husk (if using).
- Add wet ingredients: Mix in eggs, Greek yogurt, and apple cider vinegar. Stir until smooth.
- Optional: Fold in mozzarella cheese for extra softness and flavor.
- Shape buns: Wet your hands and form 4–6 round bun shapes. Place them on the tray.
- Top it off: Sprinkle sesame seeds on top.
- Bake for 20–25 minutes or until golden brown and firm to touch.
- Cool down before slicing. Enjoy with your favorite burger patty!
