Keto Brownie Bites

Ingredients:
- 1/2 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup erythritol or your favorite keto-friendly sweetener
- 1/4 tsp baking powder
- 1/8 tsp salt
- 2 large eggs
- 1/4 cup unsalted butter (melted)
- 1 tsp vanilla extract
- 1/4 cup unsweetened almond milk (or coconut milk)
- Optional: Sugar-free chocolate chips (for extra fudginess!)
Instructions:
- Preheat the Oven: Set your oven to 350°F (175°C) and line a mini muffin tin with paper liners or grease them lightly.
- Mix Dry Ingredients: In a medium bowl, combine almond flour, cocoa powder, erythritol, baking powder, and salt. Stir until well mixed.
- Combine Wet Ingredients: In a separate bowl, whisk together eggs, melted butter, vanilla extract, and almond milk.
- Blend Wet and Dry Ingredients: Slowly fold the wet ingredients into the dry ingredients until the batter is smooth. If using, fold in the sugar-free chocolate chips.
- Spoon the Batter: Divide the batter evenly into the muffin tin, filling each cavity almost to the top.
- Bake: Place the tin in the oven and bake for 10-12 minutes, or until a toothpick inserted comes out clean (or with just a few crumbs).
- Cool: Let the brownie bites cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.
- Serve & Enjoy: Once cooled, enjoy these rich, fudgy keto brownie bites that are perfect for a snack or dessert!
Tips:
- If you want them to be extra rich, you can drizzle some sugar-free chocolate syrup over the top.
