Keto Brownie Bites
Ingredients:
- 1 cup almond flour
- 1/4 cup cocoa powder (unsweetened)
- 1/2 cup powdered erythritol (or your preferred keto sweetener)
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup sugar-free chocolate chips (optional)
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C).
- Grease a mini muffin tin or line with mini muffin paper liners.
- Mix Dry Ingredients:
- In a large bowl, whisk together the almond flour, cocoa powder, powdered erythritol, baking powder, and salt.
- Combine Wet Ingredients:
- In another bowl, mix the melted butter, eggs, and vanilla extract until well combined.
- Mix Together:
- Add the wet ingredients to the dry ingredients and stir until just combined.
- If using, fold in the sugar-free chocolate chips.
- Fill Muffin Tin:
- Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
- Bake:
- Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
- Cool:
- Allow the brownie bites to cool in the tin for about 10 minutes before transferring to a wire rack to cool completely.
- Serve:
- Enjoy your keto brownie bites! Store any leftovers in an airtight container at room temperature for up to a week.
