Keto Brownie Bites

Ingredients:

  • 1 cup almond flour
  • 1/4 cup cocoa powder (unsweetened)
  • 1/2 cup powdered erythritol (or your preferred keto sweetener)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sugar-free chocolate chips (optional)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
    • Grease a mini muffin tin or line with mini muffin paper liners.
  2. Mix Dry Ingredients:
    • In a large bowl, whisk together the almond flour, cocoa powder, powdered erythritol, baking powder, and salt.
  3. Combine Wet Ingredients:
    • In another bowl, mix the melted butter, eggs, and vanilla extract until well combined.
  4. Mix Together:
    • Add the wet ingredients to the dry ingredients and stir until just combined.
    • If using, fold in the sugar-free chocolate chips.
  5. Fill Muffin Tin:
    • Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
  6. Bake:
    • Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool:
    • Allow the brownie bites to cool in the tin for about 10 minutes before transferring to a wire rack to cool completely.
  8. Serve:
    • Enjoy your keto brownie bites! Store any leftovers in an airtight container at room temperature for up to a week.
