Keto Bread Pudding
Ingredients:
- 2 cups almond flour (for keto bread texture)
- 1/2 tsp baking powder
- 4 large eggs
- 1 cup unsweetened almond milk
- 1/4 cup heavy cream
- 1/4 cup sugar substitute (erythritol or monk fruit sweetener)
- 1 tbsp vanilla extract
- 1 tsp ground cinnamon
- Pinch of salt
- 1/4 cup butter (melted)
- 1/2 cup chopped nuts (optional, like pecans or walnuts)
- 1/4 cup sugar-free chocolate chips (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Grease a baking dish with butter or cooking spray.
- In a large bowl, combine the almond flour, baking powder, cinnamon, and salt.
- In a separate bowl, whisk together the eggs, almond milk, heavy cream, vanilla extract, and sugar substitute until well combined.
- Pour the wet ingredients into the dry ingredients and stir until fully mixed.
- Stir in the melted butter and, if using, the chopped nuts and chocolate chips.
- Pour the mixture into the prepared baking dish, spreading it out evenly.
- Bake for 30-35 minutes, or until the pudding is set and the top is golden brown.
- Allow to cool slightly before serving. Enjoy warm or chilled!
