Keto Bread Pudding

Ingredients:

  • 2 cups almond flour (for keto bread texture)
  • 1/2 tsp baking powder
  • 4 large eggs
  • 1 cup unsweetened almond milk
  • 1/4 cup heavy cream
  • 1/4 cup sugar substitute (erythritol or monk fruit sweetener)
  • 1 tbsp vanilla extract
  • 1 tsp ground cinnamon
  • Pinch of salt
  • 1/4 cup butter (melted)
  • 1/2 cup chopped nuts (optional, like pecans or walnuts)
  • 1/4 cup sugar-free chocolate chips (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a baking dish with butter or cooking spray.
  2. In a large bowl, combine the almond flour, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the eggs, almond milk, heavy cream, vanilla extract, and sugar substitute until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until fully mixed.
  5. Stir in the melted butter and, if using, the chopped nuts and chocolate chips.
  6. Pour the mixture into the prepared baking dish, spreading it out evenly.
  7. Bake for 30-35 minutes, or until the pudding is set and the top is golden brown.
  8. Allow to cool slightly before serving. Enjoy warm or chilled!
