Ingredients:

  • 2 medium zucchinis, spiralized into zoodles
  • 1 lb ground beef (or ground turkey, chicken, or a meatless substitute)
  • 1 packet of taco seasoning (check for low-carb options)
  • 1 cup keto-friendly tomato sauce
  • 1/2 cup diced tomatoes (canned or fresh)
  • 1 cup shredded cheddar cheese (or any cheese of your choice)
  • 1/2 cup diced avocado
  • 1/4 cup shredded lettuce
  • 1/4 cup sour cream
  • Fresh cilantro for garnish
  • Salt and pepper, to taste

Instructions:

  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat if needed.
  2. Add the taco seasoning to the cooked meat according to the packet instructions. Mix well.
  3. Pour in the keto-friendly tomato sauce and diced tomatoes. Let the mixture simmer for a few minutes to meld the flavors.
