Ingredients:
- 2 medium zucchinis, spiralized into zoodles
- 1 lb ground beef (or ground turkey, chicken, or a meatless substitute)
- 1 packet of taco seasoning (check for low-carb options)
- 1 cup keto-friendly tomato sauce
- 1/2 cup diced tomatoes (canned or fresh)
- 1 cup shredded cheddar cheese (or any cheese of your choice)
- 1/2 cup diced avocado
- 1/4 cup shredded lettuce
- 1/4 cup sour cream
- Fresh cilantro for garnish
- Salt and pepper, to taste
Instructions:
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat if needed.
- Add the taco seasoning to the cooked meat according to the packet instructions. Mix well.
- Pour in the keto-friendly tomato sauce and diced tomatoes. Let the mixture simmer for a few minutes to meld the flavors.
- In a separate skillet, sauté the zucchini noodles (zoodles) in a bit of olive oil for about 2-3 minutes, just until slightly softened. Season with salt and pepper.
- Divide the zoodles among serving plates.
- Spoon the taco meat sauce over the zoodles.
- Top with shredded cheddar cheese, diced avocado, shredded lettuce, and a dollop of sour cream.
- Garnish with fresh cilantro.
