keto Beef Stroganoff Casserole

Ingredients:
- 1 lb (450g) ground beef (or thinly sliced beef)
- 1 tbsp butter or olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 tsp paprika
- 1/2 tsp salt & black pepper (to taste)
- 1 cup sour cream
- 1/2 cup cream cheese (softened)
- 1/4 cup beef broth
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1 tsp Worcestershire sauce (optional, for extra flavor)
- 1/2 tsp xanthan gum (to thicken, optional)
- 1 tbsp chopped parsley (for garnish)
Instructions:
- Preheat oven to 375°F (190°C) and grease a baking dish.
- Sauté the beef: In a skillet, heat butter/oil and cook beef until browned. Remove excess grease if needed.
- Cook the veggies: Add onion, garlic, and mushrooms to the skillet. Sauté until softened.
- Season & mix: Stir in paprika, salt, pepper, and Worcestershire sauce.
- Make it creamy: Lower heat and mix in sour cream, cream cheese, and beef broth. Stir well until smooth. (Add xanthan gum if using.)
- Assemble the casserole: Transfer to a baking dish, top with shredded cheddar & mozzarella cheese.
- Bake: Bake for 15-20 minutes until cheese is bubbly and golden.
- Garnish & serve: Sprinkle parsley on top and enjoy!
