keto Beef Stroganoff Casserole

Ingredients:

  • 1 lb (450g) ground beef (or thinly sliced beef)
  • 1 tbsp butter or olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 tsp paprika
  • 1/2 tsp salt & black pepper (to taste)
  • 1 cup sour cream
  • 1/2 cup cream cheese (softened)
  • 1/4 cup beef broth
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tsp Worcestershire sauce (optional, for extra flavor)
  • 1/2 tsp xanthan gum (to thicken, optional)
  • 1 tbsp chopped parsley (for garnish)

Instructions:

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Sauté the beef: In a skillet, heat butter/oil and cook beef until browned. Remove excess grease if needed.
  3. Cook the veggies: Add onion, garlic, and mushrooms to the skillet. Sauté until softened.
  4. Season & mix: Stir in paprika, salt, pepper, and Worcestershire sauce.
  5. Make it creamy: Lower heat and mix in sour cream, cream cheese, and beef broth. Stir well until smooth. (Add xanthan gum if using.)
  6. Assemble the casserole: Transfer to a baking dish, top with shredded cheddar & mozzarella cheese.
  7. Bake: Bake for 15-20 minutes until cheese is bubbly and golden.
  8. Garnish & serve: Sprinkle parsley on top and enjoy!
