Keto BBQ Ribs

Ingredients:

For the Ribs:

  • 2 racks of baby back ribs (or your preferred type)
  • Salt and pepper to taste
  • 1 tbsp olive oil or avocado oil

For the Dry Rub:

  • 2 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp ground cumin
  • 1 tbsp dried oregano
  • 1 tsp smoked paprika (optional, for extra smokiness)
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 1/2 tsp chili powder (optional, for a little heat)

For the Keto BBQ Sauce:

  • 1 cup sugar-free ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 2 tbsp stevia or your preferred keto-friendly sweetener
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp ground black pepper
  • Salt to taste

Instructions:

  1. Preheat your oven to 300°F (150°C).
  2. Prepare the Ribs:
    • Remove the membrane from the back of the ribs if it hasn’t already been done.
    • Pat the ribs dry with a paper towel.
    • Rub a thin layer of olive or avocado oil on both sides of the ribs.
  3. Apply the Dry Rub:
    • In a small bowl, mix all the dry rub ingredients together.
    • Generously apply the dry rub all over the ribs, pressing it in gently to coat both sides. Let the ribs sit for 10-15 minutes to allow the rub to adhere.
  4. Bake the Ribs:
    • Place the ribs on a baking sheet lined with aluminum foil or parchment paper.
    • Cover them with another piece of foil and bake in the preheated oven for about 2.5 to 3 hours. This slow cooking process will make the ribs tender.
  5. Prepare the BBQ Sauce:
    • In a saucepan, combine all the BBQ sauce ingredients.
    • Bring it to a simmer over medium heat, stirring occasionally. Let it cook for 5-10 minutes until it thickens to your desired consistency. Taste and adjust seasoning as needed.
  6. Grill the Ribs (Optional but recommended):
    • Preheat your grill to medium-high heat.
    • Once the ribs are done baking, remove them from the oven, and brush a generous amount of the BBQ sauce on both sides.
    • Transfer the ribs to the grill and cook for 5-10 minutes on each side, brushing more sauce during grilling to caramelize and add flavor.
  7. Serve:
    • Once done, remove from the grill and let them rest for a few minutes before slicing.
    • Serve with extra keto BBQ sauce on the side.
