Keto BBQ Ribs

Ingredients:
For the Ribs:
- 2 racks of baby back ribs (or your preferred type)
- Salt and pepper to taste
- 1 tbsp olive oil or avocado oil
For the Dry Rub:
- 2 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp ground cumin
- 1 tbsp dried oregano
- 1 tsp smoked paprika (optional, for extra smokiness)
- 1 tsp ground black pepper
- 1 tsp salt
- 1/2 tsp chili powder (optional, for a little heat)
For the Keto BBQ Sauce:
- 1 cup sugar-free ketchup
- 1/4 cup apple cider vinegar
- 1/4 cup Dijon mustard
- 1 tbsp Worcestershire sauce
- 2 tbsp stevia or your preferred keto-friendly sweetener
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp ground black pepper
- Salt to taste
Instructions:
- Preheat your oven to 300°F (150°C).
- Prepare the Ribs:
- Remove the membrane from the back of the ribs if it hasn’t already been done.
- Pat the ribs dry with a paper towel.
- Rub a thin layer of olive or avocado oil on both sides of the ribs.
- Apply the Dry Rub:
- In a small bowl, mix all the dry rub ingredients together.
- Generously apply the dry rub all over the ribs, pressing it in gently to coat both sides. Let the ribs sit for 10-15 minutes to allow the rub to adhere.
- Bake the Ribs:
- Place the ribs on a baking sheet lined with aluminum foil or parchment paper.
- Cover them with another piece of foil and bake in the preheated oven for about 2.5 to 3 hours. This slow cooking process will make the ribs tender.
- Prepare the BBQ Sauce:
- In a saucepan, combine all the BBQ sauce ingredients.
- Bring it to a simmer over medium heat, stirring occasionally. Let it cook for 5-10 minutes until it thickens to your desired consistency. Taste and adjust seasoning as needed.
- Grill the Ribs (Optional but recommended):
- Preheat your grill to medium-high heat.
- Once the ribs are done baking, remove them from the oven, and brush a generous amount of the BBQ sauce on both sides.
- Transfer the ribs to the grill and cook for 5-10 minutes on each side, brushing more sauce during grilling to caramelize and add flavor.
- Serve:
- Once done, remove from the grill and let them rest for a few minutes before slicing.
- Serve with extra keto BBQ sauce on the side.
