🥃 Keto Bailey’s Irish Cream
Makes: ~1½ cups (12 oz)
Prep Time: 5–10 minutes
Net Carbs: ~1g per ounce (depending on sweetener and brand of whiskey)
🧾 Ingredients:
- 1 cup heavy cream
- 2 tbsp unsweetened almond milk (or water for thinner texture)
- 1/4 cup unsweetened cocoa powder (or 2 tbsp for a lighter chocolate flavor)
- 1/3 cup powdered erythritol (or monk fruit blend — adjust to taste)
- 1/2 tsp instant espresso powder or strong brewed coffee (optional, for depth)
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract (optional, adds that signature Irish Cream flavor)
- Pinch of salt
- 1/2 cup Irish whiskey (like Jameson or a keto-friendly whiskey)
👩🍳 Instructions:
- Blend or Whisk:
- Add everything except the whiskey to a blender or mixing bowl.
- Blend or whisk until smooth and creamy (no cocoa lumps).
- Add the Whiskey:
- Stir in the whiskey until fully incorporated.
- Chill & Store:
- Pour into a glass bottle or mason jar.
- Store in the fridge for up to 2 weeks. Shake well before each use.
🍸 How to Use It:
- Pour over ice for a classic sip.
- Mix into coffee or espresso for a keto Irish coffee.
- Blend with ice for a frozen Baileys treat.
- Add to keto hot chocolate or use in low-carb desserts like mousse or fat bombs.
📝 Tips:
- Want it dairy-free? Use full-fat coconut cream in place of heavy cream.
- If too thick after chilling, thin with almond milk or a splash of whiskey.
- For a more authentic Bailey’s flavor, don’t skip the almond extract and coffee!
