Keto Apple Mug Cake

Ingredients

  • 1 tbsp almond flour
  • 1 tbsp coconut flour
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1 large egg
  • 1 tbsp melted butter or coconut oil
  • 1–2 tbsp erythritol or your favorite keto-friendly sweetener
  • 1/2 tsp vanilla extract
  • 1 tbsp unsweetened applesauce (adds the apple flavor without too many carbs)
  • Optional: 1/4 tsp apple pie spice for extra flavor

Instructions

  1. Mix the Dry Ingredients: In a microwave-safe mug, combine almond flour, coconut flour, baking powder, and cinnamon (and apple pie spice if using). Mix well.
  2. Add Wet Ingredients: Add the egg, melted butter, erythritol, vanilla extract, and unsweetened applesauce. Stir everything together until smooth.
  3. Microwave: Microwave on high for 1–1.5 minutes, or until the cake is set but still moist. Be careful not to overcook it, as it can become dry.
  4. Serve: Let it cool for a minute, then enjoy it straight from the mug or transfer to a plate.

Optional Toppings

  • A sprinkle of cinnamon
  • Keto whipped cream
  • A drizzle of sugar-free caramel or chocolate syrup
