1–2 tbsp erythritol or your favorite keto-friendly sweetener
1/2 tsp vanilla extract
1 tbsp unsweetened applesauce (adds the apple flavor without too many carbs)
Optional: 1/4 tsp apple pie spice for extra flavor
Instructions
Mix the Dry Ingredients: In a microwave-safe mug, combine almond flour, coconut flour, baking powder, and cinnamon (and apple pie spice if using). Mix well.
Add Wet Ingredients: Add the egg, melted butter, erythritol, vanilla extract, and unsweetened applesauce. Stir everything together until smooth.
Microwave: Microwave on high for 1–1.5 minutes, or until the cake is set but still moist. Be careful not to overcook it, as it can become dry.
Serve: Let it cool for a minute, then enjoy it straight from the mug or transfer to a plate.
