Keto and Low carb Philly Cheesesteak Meatloaf

Ingredients:

  • 1 lb ground beef
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp smoked paprika
  • 1/2 cup shredded provolone cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup sugar-free marinara sauce (optional, for topping)

Instructions:

  1. Preheat Oven and Prepare Pan:
    • Preheat your oven to 375°F (190°C).
    • Grease a loaf pan with butter or cooking spray.
  2. Mix Meatloaf Ingredients:
    • In a large bowl, combine the ground beef, almond flour, grated Parmesan cheese, chopped onion, chopped green bell pepper, minced garlic, Worcestershire sauce, salt, pepper, oregano, thyme, and smoked paprika. Mix until well combined.
  3. Add Cheese:
    • Fold in the shredded provolone and mozzarella cheeses until evenly distributed throughout the mixture.
  4. Form and Bake Meatloaf:
    • Transfer the meat mixture into the greased loaf pan, pressing it down gently and shaping it into a loaf shape.
    • Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (71°C).
  5. Optional Topping:
    • If desired, spread the sugar-free marinara sauce over the top of the meatloaf during the last 10 minutes of baking.
  6. Rest and Serve:
    • Let the meatloaf rest for 5-10 minutes before slicing and serving.
  7. Serve:
    • Serve slices of the Philly Cheesesteak Meatloaf with a side salad or steamed vegetables.
