Keto Malibu Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 cup almond flour
- 2 eggs
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Olive oil, for frying
- Sugar-free barbecue sauce (optional, for serving)
- Sliced ham (optional, for serving)
- Sliced Swiss cheese (optional, for serving)

Instructions:
- Prepare the Chicken:
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper.
- Coat Chicken:
- In a shallow dish, beat the eggs.
- In another shallow dish, mix together the almond flour, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, and paprika.
- Dip each chicken breast in the beaten eggs, then coat them evenly with the almond flour mixture.
- Cook Chicken:
- In a large skillet over medium-high heat, heat olive oil.
- Add the coated chicken breasts to the skillet and cook for about 2-3 minutes on each side, until golden brown.
- Transfer the browned chicken breasts to a baking dish.
- Bake:
- Bake the chicken in the preheated oven for about 15-20 minutes, or until the chicken is cooked through and no longer pink in the center.
- Optional Assembly:
- If desired, top each chicken breast with a slice of ham and a slice of Swiss cheese during the last few minutes of baking, allowing the cheese to melt.
- Serve:
