Keto Malibu Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup almond flour
  • 2 eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Olive oil, for frying
  • Sugar-free barbecue sauce (optional, for serving)
  • Sliced ham (optional, for serving)
  • Sliced Swiss cheese (optional, for serving)

Instructions:

  1. Prepare the Chicken:
    • Preheat your oven to 375°F (190°C).
    • Season the chicken breasts with salt and pepper.
  2. Coat Chicken:
    • In a shallow dish, beat the eggs.
    • In another shallow dish, mix together the almond flour, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, and paprika.
    • Dip each chicken breast in the beaten eggs, then coat them evenly with the almond flour mixture.
  3. Cook Chicken:
    • In a large skillet over medium-high heat, heat olive oil.
    • Add the coated chicken breasts to the skillet and cook for about 2-3 minutes on each side, until golden brown.
    • Transfer the browned chicken breasts to a baking dish.
  4. Bake:
    • Bake the chicken in the preheated oven for about 15-20 minutes, or until the chicken is cooked through and no longer pink in the center.
  5. Optional Assembly:
    • If desired, top each chicken breast with a slice of ham and a slice of Swiss cheese during the last few minutes of baking, allowing the cheese to melt.
  6. Serve:
