Keto Almond Joy Cookies

Ingredients:

  • Cookies:
    • 1 cup almond flour
    • 1/4 cup coconut flour
    • 1/2 cup unsweetened shredded coconut
    • 1/2 cup powdered erythritol (or preferred keto sweetener)
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, melted
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon almond extract
  • Topping:
    • 1/2 cup sugar-free chocolate chips
    • 1 tablespoon coconut oil
    • Whole almonds (about 20-24)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Prepare Cookie Dough:
    • In a large mixing bowl, combine the almond flour, coconut flour, shredded coconut, powdered erythritol, baking powder, and salt. Mix well.
    • Add the melted butter, egg, vanilla extract, and almond extract to the dry ingredients. Stir until well combined and a dough forms.
  3. Shape Cookies:
    • Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet and flatten slightly with your hand or the bottom of a glass.

  6. Assemble Cookies:
    • Once the cookies are completely cool, spoon a small amount of the melted chocolate on top of each cookie. Place an almond in the center of each cookie and press down gently.
    • Let the chocolate set at room temperature or place the cookies in the refrigerator for a few minutes to speed up the process.
