Keto Air Fryer Scallops

Ingredients:

  • 12 large sea scallops
  • 1 tablespoon olive oil (or melted butter for extra flavor)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon lemon zest (optional for brightness)
  • Fresh parsley (for garnish)

Instructions:

  1. Preheat the Air Fryer: Set your air fryer to 400°F (200°C) and let it preheat for about 3-5 minutes.
  2. Prepare the Scallops: Pat the scallops dry with a paper towel to remove any excess moisture. This will help them sear nicely in the air fryer.
  3. Season the Scallops: In a small bowl, mix the olive oil, garlic powder, paprika, salt, pepper, and lemon zest (if using). Toss the scallops in this mixture until they are well-coated.
  4. Arrange in the Air Fryer: Place the scallops in the air fryer basket in a single layer, ensuring they are not overcrowded. You may need to cook them in batches if your air fryer is small.
  5. Cook the Scallops: Air fry the scallops for about 6-8 minutes, flipping them halfway through. The scallops should be opaque and slightly golden brown on the edges when done. Cooking time may vary slightly depending on the size of your scallops and the power of your air fryer.
  6. Serve: Once done, transfer the scallops to a serving plate, garnish with fresh parsley, and optionally, a squeeze of lemon juice for added freshness.

Tips:

  • For an extra crisp texture, you can lightly spray the scallops with cooking spray before air frying.
