Keto Air Fryer Italian Meatballs

Ingredients (Makes ~18 meatballs):

  • 1 lb (450g) ground beef (80/20 or lean)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1 large egg
  • 2 tbsp heavy cream
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Optional: fresh parsley for garnish

Instructions:

  1. Preheat your air fryer to 375°F (190°C) for 3–5 minutes.
  2. Mix all ingredients in a large bowl until well combined. Do not overmix.
  3. Form meatballs (about 1 to 1.5 inches in size) using your hands or a scoop.
  4. Place meatballs in a single layer in the air fryer basket. Avoid overcrowding; cook in batches if needed.
  5. Air fry for 10–12 minutes, shaking the basket halfway through. Meatballs should be browned and cooked through (internal temp: 160°F / 71°C).
  6. Serve hot with sugar-free marinara sauce, over zucchini noodles, or as a keto meatball sub (lettuce wrap or low-carb bread).

🔥 Tips:

  • Want extra moisture? Add 1–2 tbsp of ricotta cheese to the mix!
  • Meal prep-friendly: make a big batch and freeze the uncooked meatballs for later.
