Keto Air Fryer Italian Meatballs

Ingredients:

  • 1 lb ground beef (preferably 80/20 for juiciness)
  • 1/2 cup almond flour (to keep it low carb)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic (minced)
  • 1 tbsp Italian seasoning (or a mix of basil, oregano, and thyme)
  • 1/4 tsp red pepper flakes (optional for a bit of heat)
  • Salt and pepper (to taste)
  • 1/4 cup chopped fresh parsley (optional)
  • 1/4 cup sugar-free marinara sauce (for dipping or serving)

Instructions:

  1. Preheat the Air Fryer: Set it to 375°F (190°C) and let it heat up while you prepare the meatballs.
  2. Mix the Ingredients: In a large bowl, combine the ground beef, almond flour, Parmesan cheese, egg, minced garlic, Italian seasoning, red pepper flakes (if using), salt, pepper, and parsley (if using). Use your hands to mix until everything is well incorporated.
  3. Form the Meatballs: Roll the mixture into 1-inch meatballs (you should get about 16-20 meatballs).
  4. Air Fry the Meatballs: Place the meatballs in a single layer in the air fryer basket. Air fry for 10-12 minutes, shaking the basket halfway through the cooking time to ensure even cooking. The meatballs should be browned on the outside and cooked through (internal temperature should reach 160°F or 71°C).
  5. Serve: Serve the meatballs with sugar-free marinara sauce on the side for dipping.

Tips:

  • You can make a batch ahead of time and freeze the meatballs for a quick meal later.
  • Add some extra herbs or spices based on your taste preferences.
