Diabetic-Friendly Italian Yogurt Cake

🧾 Ingredients

  • 1 cup plain Greek yogurt (unsweetened)
  • 2 eggs
  • ¼ cup erythritol or stevia blend
  • ¼ cup olive oil (classic Italian touch)
  • 1 tsp vanilla extract
  • Zest of 1 lemon (optional, but authentic flavor)
  • ¾ cup almond flour
  • ¼ cup whole wheat flour (or oat flour)
  • 1 tsp baking powder
  • Pinch of salt

👩‍🍳 Instructions

  1. Preheat oven to 180°C (350°F). Grease a small cake pan.
  2. Mix wet ingredients
    • Whisk yogurt, eggs, sweetener, olive oil, vanilla, and lemon zest
  3. Add dry ingredients
    • Stir in almond flour, wheat/oat flour, baking powder, and salt
  4. Bake
    • Pour batter into pan
    • Bake for 30–35 minutes until golden and set
  5. Cool completely before slicing

🍋 Optional Light Glaze (Diabetic-Friendly)

  • 2 tbsp Greek yogurt
  • Few drops lemon juice
  • Pinch of sweetener
