Ingredients:-
For the Salad:
- 4 cups mixed salad greens (e.g., romaine, arugula, spinach)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup black olives, sliced
- 1/4 cup reduced-fat feta cheese, crumbled
For the Dressing:–
- 2 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:-
- Prepare the Salad:
- In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, and feta cheese.
- Make the Dressing:
- In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and pepper.
- Combine Salad and Dressing:
- Pour the dressing over the salad and toss well to coat the ingredients evenly.
- Serve:
- Divide the salad among serving plates and enjoy immediately.
