4 Italian chicken sausages (about 12–14 oz / 350–400 g total)
1½ lb (700 g) baby potatoes, halved
1 red bell pepper, sliced
1 zucchini, sliced
1 small red onion, sliced
1½ tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
½ tsp salt
Black pepper to taste
High-Protein Creamy Drizzle
¾ cup plain Greek yogurt
¼ cup cottage cheese
2 tbsp grated Parmesan
1 tbsp lemon juice
1 tbsp chopped parsley
1 small clove garlic, minced
1–3 tbsp water (to thin)
👩🍳 Instructions
Preheat oven to 425°F (220°C). Line a large sheet pan with parchment.
Toss potatoes, bell pepper, zucchini, and onion with olive oil, garlic powder, Italian seasoning, salt, and pepper.
Spread on pan in a single layer.
Nestle whole sausages between the veggies.
Roast 25–30 minutes, flipping sausages and stirring veggies halfway, until potatoes are golden and sausages are cooked through.
Blend or whisk all drizzle ingredients until smooth and pourable.
Slice sausages and drizzle sauce over the hot pan.
