Instant Pot Lasagna

Ingredients:

For the Meat Sauce:

  • 1 lb (450g) ground beef or Italian sausage
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For the Lasagna:

  • 9-12 lasagna noodles (preferably no-boil or broken into pieces)
  • 1 1/2 cups ricotta cheese
  • 1 large egg
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Prepare the Meat Sauce:
    • Set the Instant Pot to ‘Sauté’ mode. Add the ground beef or Italian sausage and cook until browned. Drain any excess fat.
    • Add the chopped onion and garlic to the pot. Sauté for about 2-3 minutes, or until the onion is translucent.
    • Stir in the tomato sauce, diced tomatoes, tomato paste, basil, oregano, salt, and pepper. Mix well.
    • Turn off the ‘Sauté’ mode.
  2. Layer the Lasagna:
    • Spread a thin layer of the meat sauce on the bottom of the Instant Pot.
    • Place a layer of lasagna noodles on top of the sauce (you can break them to fit if necessary).
    • In a bowl, mix the ricotta cheese with the egg. Spread a portion of this mixture over the noodles.
    • Add a layer of mozzarella cheese on top of the ricotta mixture.
    • Repeat the layers (meat sauce, noodles, ricotta mixture, mozzarella) until you’ve used up the ingredients, finishing with a layer of meat sauce and a generous topping of mozzarella and Parmesan cheese.
  3. Cook the Lasagna:
    • Pour 1 cup of water into the bottom of the Instant Pot (this is necessary to create steam for pressure cooking).
    • Carefully lower the lasagna (using a sling made of aluminum foil or a trivet) into the Instant Pot.
    • Close the lid, set the valve to ‘Sealing,’ and cook on ‘Manual’ or ‘Pressure Cook’ mode for 20 minutes.
    • Once cooking is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release for any remaining pressure.
  4. Serve:
    • Carefully remove the lasagna from the Instant Pot. Let it sit for about 10 minutes before slicing. This helps it set and makes serving easier.
    • Garnish with fresh basil or parsley if desired.
