How to Make Slow Cooker Ground Beef Chow Mein

Ingredients:
- 1 lb lean ground beef (93% lean)
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 cup shredded carrots
- 1 cup cabbage (green or napa), shredded
- 2 tbsp soy sauce (low-sodium)
- 2 tbsp hoisin sauce (or sugar-free hoisin for lower points)
- 1 tsp ginger (freshly grated or ground)
- 1/4 tsp black pepper
- 1/2 cup low-sodium beef broth
- 2 cups cooked whole wheat or shirataki noodles (or use Zoodles for fewer points)
- 1/2 tsp sesame oil (optional, for flavor)
- 1-2 tbsp chopped green onions for garnish
- Optional: Red pepper flakes for some heat!
Instructions:
- Prepare the Slow Cooker:
- In a large skillet over medium-high heat, brown the ground beef until fully cooked, breaking it up into small pieces as it cooks. Drain any excess fat.
- Combine Ingredients:
- Add the browned ground beef, chopped onion, minced garlic, shredded carrots, cabbage, soy sauce, hoisin sauce, ginger, black pepper, and beef broth into your slow cooker. Stir well to combine.
- Slow Cook:
- Cover and cook on low for 4-6 hours or high for 2-3 hours. The vegetables should soften, and the flavors will meld together.
- Prepare the Noodles:
- While the mixture is cooking, prepare your noodles (whole wheat, shirataki, or Zoodles). If you’re using traditional noodles, cook them according to package instructions.
- Finish the Dish:
- About 10 minutes before serving, add the cooked noodles to the slow cooker, stirring gently to combine. Drizzle with sesame oil if desired, and mix everything well.
- Serve:
- Once everything is heated through, garnish with green onions and optional red pepper flakes for a spicy kick.
